La Quesería is located on the farm of our property at kilometer 69,200 of the road from Toledo to Alcázar de San Juan in the municipality of Madridejos, province of Toledo and bordering the Cañada Real Soriana that served as passage to the transhumant sheep, that in the hot summer months they went to cooler areas to take advantage of the rich pastures of the high lands of Soria.
The design of the building is based on the traditional Toledo construction with ceramic brick. We have added a tasting and sale room with the aim of having a more direct relationship with the client and trying to transmit a livestock and gastronomic culture through our cheeses.
In this small industry we are working 3 people dedicated to making cheese in the traditional way, but using the equipment and facilities required by current sanitary regulations.
The livestock, after being in an extensive system in different places of MADRIDEJOS, is currently in a semi-stabling system, in the facilities of the Toledo-Alcazar km. 69,200.
The exploitation system was changed due to scarce natural resources and high labor costs, with which the livestock was registered in the genealogical book (AGRAMA) in 1988 to achieve greater selection and production, under the parameters of the Manchego race.
At present the livestock consists of 1,150 breeding females and 21 males. The average number of births per year per sheep is 1.5, and according to the latest milk controls carried out, the average production per sheep is between 250 and 260 liters per lactation normalized in 120 days.
Between last year and this year, there have been made more than 1,500 milk yield controls, five lots of artificial insemination of 120 sheep each one, and livestock was registered in the designation of origin of the Manchego lamb, all this in order to improve and preserve the race of La Mancha.
